ahhhhh summer! LA canners

I am originally from Los Angeles (subburb actually) and my Dad used

to do the " freezer jam " thing, but I have a friend in Baldwin Park

(another suburb) and she ALWAYS cans her multitudes of tomatoes and

she makes a killer spricot jam with her home-grown apricots. I started

canning once I moved up here to BC, Canada and this year I have had

quite a lot of fun and satisfaction with it. I have canned blackberry

jam and blackberry syrup, Apple/rhubarb/ginger jam (a new recipe),

pina colada jam (dessert-like), marinataed italian vegetables,

millionaire relish, garlic dills, and pickled beets. I must admit that

I'm pretty proud of myself :0) We had VERY VERY VERY disappointing

tomato crops this year so I am jealous of all of you that are swimming

in them. Can you believe that we are actually BUYING tomatoes????? And

at this time of year!

Stef, what is millionaire relish? and you should be proud of

yourself!

 

I feel blessed with the tomatoes. I have enjoyed them fresh in

previous years, but this year is the first time I have enough to

even think about canning! It is a good think I really really really

like tomatoes....

 

This has been my first experience canning vegetables, but my second

experience canning in general. In the spring the loquat tree gets

very productive, and we have made some loquat chutney and jams.

Hi Steph,

I am originally from BC too. I always try to go back in August to make

Blackberry jelly and syrup. It is the best I think. I can taste it just

thinking about it. I find you don't need to use packaged pectin with

Blackberries, Raspberries or Strawberries. They have enough natural pectin in

them. I use equal berries and sugar and boil for 5 minutes or a bit longer if

you like your jelly quite firm. In the directions of packaged pectin the recipe

is to add lemon juice along with their pectin. I always wonder if the lemon

juice is to kill the natural pectin, so you will then need their packaged

pectin. Anyways I prefer jelly without the pectin as it is a softer

jelly...and I think I am so clever LOL!
