Guest guest Posted August 12, 2007 Report Share Posted August 12, 2007 Penne Salad with Parsley Pesto and Squash 8 ounces penne, or other short pasta 2 zucchini 1/2 bell pepper 1/4 cup black olives, optional 1/4 onion 1 cup packed parsley leaves 3 tablespoons walnuts juice 1/2 of a lemon 2 tablespoons virgin olive oil sliced tomatoes, optional Cook pasta. 1 minute before pasta is done, add zucchini (cut in half, then sliced thinly). Once zucchini has simmered for a minute, drain and rinse with cold water. In large bowl, combine pasta with zucchini, peppers, olives, onions, salt and pepper. In food processor, combine parsley, nuts, lemon juice and oil. Process until mixture is coarsely and evenly pureed. Add pesto to pasta, mix well.
