Guest guest
I checked back and guess I didn't send this recipe to the group. It is excellent. 3 sausage links (I use 1 roll GimmeLean) 2 small yellow squash, cut up 1 large zucchini or a few small 1 large carrot, cut up 1 medium onion, diced 6 oz. Mushrooms, sliced 6 eggs (I use egg whites) 2 garlic cloves, minced 1 cup parmesan cheese Basil and marjoram to taste as well as salt and pepper 1 cup shredded cheese (low fat cheddar??) 1 tbs. Olive oil. Fry sausage in pan. I just brown it in olive oil. Saute veggies until almost done. In a large bowl mix the eggs, garlic, parmesan and the spices. Add the sausage and veggies. Oil a 9 X 13 casserole dish and pour in mixture. Sprinkle the shredded cheese on top. Bake in 350 for about 45 minutes or into eggs are done. You can also change around the veggies to broccoli, peppers, celery...what ever you have. Sue....with apology to Red, whom ever she is. LOL ---- BARBARA KIPPER 8/8/2007 3:05:16 PM Mom Cat and Sue Thanks/ Mock Sausage Thanks... Sue and Mom Cat I will try: Gimme Lean and Morningstar Sausage Patties. I am planning a meal for friends and family when we return to AZ after summer. I wanted to do a whole vegetarian meal without telling anyone that it is completely veggie. I know they will be fine with it even knowing it is vegetarian, but the idea of a really tasty meal without meat was something to try and pull together for the first time with them. They are all big on meat, so to do this with just a salad or veg. burger or a veggie pizza wouldn't cut it. I am thinking of a light wine spritzer and very veggie pizza as " starters, " [more vegs on it than cheese] in lieu of hors d'oeuvres. I want them to be satisfied with the mock sausage in a casserole, or quiche. [i have copied off several group site salads to think about. There are so many that everyone has contributed!] I will report back later in the fall with my plans and the outcome. Any suggestions for this " event, " will be great. Guest guest
I make this about once a week. And then freeze slices for us to eat the rest of the week. We really like it.
