Guest guest Posted August 8, 2007 Report Share Posted August 8, 2007 @@@@@ Cheese-free Pesto - Vegan 1/2 cup spinach leaves, washed and torn 1/2 cup minced parsley 1/4 cup chopped walnuts or toasted pine nuts 2 tablespoons olive oil 2 garlic cloves, minced 1 tablespoon light-colored miso 1 tablespoon dried basil In blender or food processor, process spinach, parsley, nuts, oil, garlic, miso and basil until pureed and smooth. Makes about 1/2 cup or 4 servings. Per serving: 125 calories; 12 g fat (1 g saturated fat; 86 percent calories from fat); 4 g carbohydrates; 0 mg cholesterol; 167 mg sodium; 2 g protein; 1.6 g fiber.
