Guest guest Posted August 8, 2007 Report Share Posted August 8, 2007 Spiced Zucchini and Peas in Tomato Sauce (Torai Masala-India) 1/2 cup chopped red onions 3 garlic cloves, minced 1 celery rib, sliced 2 tbsps. oil 1/2 tsp. turmeric 1/2 tsp. cumin powder 3 cups cubed zucchini 2 1/2 cups tomato sauce 1 cup frozen peas 3 pinch cayenne pepper Saute onions, garlic, and celery in oil for 2 minutes. Add turmeric, cumin and zucchini. Cook over medium heat for 5 minutes. Add tomato sauce, peas and cayenne pepper and cook until zucchini is tender, about 15 minutes. Serves 6. I didn't mean to resend it to the list, but to myself to remind myself to make soon. LOL Can't take credit for this yummy creation.
