Guest guest Posted August 7, 2007 Report Share Posted August 7, 2007 Acapulco Tempeh Tacos 1 pound tempeh (2 8-oz packages) 2 tbls extra virgin olive oil 3 tbls tamari or soy 1/4 cup lime juice 1 tbls chili powder 1 onion, chopped 12 taco shells Optional taco fixings shredded lettuce sprouts salsa grated cheese avocado slices Crumble tempeh into little pieces and place in a mixing bowl. Combine 1 tbls of the olive oil, tamari, lime juice, and chili powder in small bowl and pour this marinade over the tempeh. Let stand 10 to 30 minutes. Heat the other tbls of oil in a large skillet. Add onion and saute until soft. Add tempeh and keep mixture moving in the pan until tempeh turns golden brown. Add chopped cilantro just prior to serving. Warm taco shells.
