Baked Red Peppers and Garlic with Pasta

 

4 largered pepper, seeded and cut into strips

2 clove garlic, finely chopped

1/3 cup olive oil

4 tsps. brown sugar

1 lbs. penne or other pasta

1/4 cup fresh basil, shredded

 

Preheat oven to 350 degrees. Combine first 4 ingredients in a baking dish, mix

well. Bake 1 hour, or until peppers are soft. Cook pasta in a large pan of

boiling water 10 minutes or until al dente. Drain. Combine pasta with pepper

mixture and basil. Mix well. Serves 4.
