Guest guest Posted August 6, 2007 Report Share Posted August 6, 2007 Hello Friends, For someone who is striving to learn to cut meat out of meals, I have found it a fun challenge to convert meat dishes to meatless. It isn't really THAT hard and I am going to start looking at the commercially prepared meat substitutes. My DH is a meat person and I suggested today that we TRY some of the substitutes. Both of us have to take cholesterol meds, wouldn't it be good to cut those out, if meatless could aid us? Barb AZ/OR ~~~~~~~~~~~~ Today on a Betty Crocker message, there was a BLT share. Chicken, beef and " ta da: " vegetarian! Interestingly, they offered: Black Bean Bagel Sandwiches Vegetarian BLT--bean, lettuce and tomato--on a bagel! 1 can (15 oz) Progresso® black beans, drained, rinsed 1/3 cup Old El Paso® Thick 'n Chunky salsa 1/4 teaspoon ground cumin or chili powder 4 bagels, cut horizontally in half 2 plum (Roma) tomatoes, sliced Lettuce leaves 1. In food processor or blender, cover and process beans, salsa and cumin until smooth. 2. Spread 1/4 cup bean mixture over each of 4 bagel halves. Top with tomato, lettuce and remaining bagel halves. ~~~~~~~~~~ Also: When I was a kid I remember having white beans sandwiches. I think they had been cooked with ham, but the idea is they were good, should be fine without the ham and recently I had beans on toast and that was great. B.
