Guest guest Posted August 6, 2007 Report Share Posted August 6, 2007 Asian Pears and Watercress Salad with Sesame Dressing Dressing: 1 1/2-inch-thick slice peeled fresh ginger 1/4 cup smooth peanut butter 3 tbsps. sesame oil 1/4 cup rice vinegar 1 1/2 tbsps. sugar 2 tbsps. water 1 tsp. chili paste with garlic 1/2 tsp. salt Salad: 1 1/2 lbs. asian pears, 2 to 3 small 4 cups trimmed watercress sprigs 1 carrots, finely shredded Garnish: chopped peanuts Blend all dressing ingredients in a blender until smooth. Peel and core pears and cut into 1/8 to 1/4 inch thick julienne. On each of 4 plates, layer watercress, pear, and carrot, seasoning with salt and pepper. Drizzle salad with dressing.
