INGREDIENTS: 2 c. whole wheat flour* 1/2 tsp pure honey* 1 c. very warm water 1 package yeast 1 tbsp extra virgin olive oil* 1 lg egg*, beaten, at room temperature METHODS: Mix warm water, honey, yeast and 1/3 c flour. Stir well, add 1 c flour, olive oil and egg. Beat with a fork or electric mixer on low speed 1 minute, scraping bowl frequently. Stir in enough remaining flour to make dough easy to handle. Place dough on lightly floured surface. Knead about 5 minutes or until dough is smooth and springy. Place dough in large bowl greased with olive oil, turning dough to grease all sides. Cover bowl loosely with plastic warp and let rise in warm place about 1 hour or until double. Dough is ready if indentation remains when touched. Grease rectangular pan 13 " x 9 " x 2 " with butter*. Gently push fist into dough to deflate. Divid dough into 15 equal pieces. Shape each piece into a ball; place in pan. Brush with butter*. Cover loosely with plastic warp and let rise in warm place about 30 minutes or until double. Heat oven to 375F. Bake 12-15 minutes or until golden brown. Serve warm or cool.
