Guest guest Posted August 5, 2007 Report Share Posted August 5, 2007 * Exported from MasterCook * Spiced Feta Recipe By :Spice: Flavors of the Eastern Meditteranean by Ana Sortun Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound feta cheese -- preferably French sheep's milk or goat's milk, drained and roughly crumbled 1/2 teaspoon Middle Eastern Five Spice mix 1/4 teaspoon sumac -- (or 3 pinches sweet Spanish paprika and 1 pinch cayenne pepper) 1/2 teaspoon Aleppo chilies 2 tablespoons finely chopped fresh flat-leaf parsley salt and freshly ground pepper to taste Place the crumbled feta in a mixing bowl and stir in 1/2 teaspoon 5-spice mix, the sumac, Aleppo chilies, and parsley. Stir for a few minutes ot make the mixture as creamy as possible, although chunks of feta will remain. Season with salt and pepper (the feta may be salty enough, depending on the brand). MIDDLE EASTERN FIVE SPICE MIX 2 Tablespoons Whole Allspice 1 Teaspoon Whole Cloves 1 Tablespoon Whole Peppercorns 1/2 Teaspoon Freshly Grated or Ground Nutmeg 1 Tablespoon Ground Cinnamon Using a coffee grinder or blender, grind the allspice, cloves, and peppercorns until fine. Transfer the ground spices to a small mixing bowl. Stir in the nutmeg and cinnamon. Store in an airtight container in a cool, dark place, such as a cupboard, for up to 4 months.
