Guest guest Posted August 5, 2007 Report Share Posted August 5, 2007 * Exported from MasterCook * Slow Cooker Vegan Red Cabbage with Fruit and Onions - 7 pts Recipe By :The Vegetarian Slow Cooker by Joanna White Serving Size : 5 Preparation Time :0:00 Categories : Slow Cooker Vegan WW Points Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup butter 1/2 cup chopped shallots 2 cups finely sliced onions -- sweet variety 2 cups Granny Smith apples -- peeled and thinly sliced 1 medium red cabbage -- thinly sliced 3/4 cup raspberry vinegar 1/2 cup sugar -- or more to taste salt and pepper -- to taste 2 cups fresh raspberries In a large skillet, melt butter and saute shallots and onions for 5 minutes on medium, until onions are soft and beginning to brown. Transfer onion mixture to the slow cooker. Add apple, cabbage, vinegar, sugar, salt and pepper. Cover and cook on low heat for 6 to 7 hours. Add raspberries and cook for another 30 minutes. Taste and adjust seasonings and sweetness. Makes 4 to 6 servings.
