Pkg) firm tofu 1/4 cup chopped walnut ½ onion, minced 1/4 cup breadcrumbs 1 egg, lightly beaten 3 tbs. Mince fresh parsley 1 pinch pepper ½ tsp. Salt olive oil for frying 1/4 tomato juice 1/4 cup ketchup 1 pinch dried oregano 3 tbs. grated Parmesan cheese Heat oven at 350. Press tofu between paper towels to remove excess liquid. In a bowl mash tofu and combine with walnuts, onions, breadcrumbs, egg, parsley, pepper and salt. Mix well and shape into 1 ½ inch balls. Add 1/4 to ½ inch olive oil to a wok or skillet over medium-high heat. Add meatballs and cook until firm and brown. Combine tomato juice, ketchup and oregano in a bowl. Place meatballs in a baking dish, cover with sauce and top with Parmesan. Bake 20 minutes. Served with extra grated cheese.
