Taken and revised from allrecipes.com:

 

Ingredients:

1 tablespoon olive oil

1 chopped onion

2 garlic cloves, crushed

2 1/2 tablespoons curry powder

2 tablespoons tomato paste

1 (14.5 ounce) can diced tomatoes

1 cube vegetable bouillon

1 (10 ounce) package frozen mixed veggies

1 1/2 cups water

Salt and pepper to taste

2 tablespoons chopped fresh cilantro

 

Directions:

1. In a large saucepan over medium high, heat oil and saute onion and

garlic until golden. Stir in curry powder and tomato paste, cook 2 -3

minutes.

2. Stir in tomatoes, veggie bouillon cube, mixed veggies, water, salt and

pepper to taste. Cook about 30 minutes until veggies are well done, (not

crunchy) Sprinkle with fresh cilantro prior to serving.

 

My revised:

I didn't have tomato paste. I added curry powder with 1 can lite coconut

milk. I added about a cup more of water.

I didn't add bouillon cube, because of the salt content.

My veggies were: bag of broccoli and carrots, 5 small red potatoes, fresh

mushrooms, frozen peas and a small head of cauliflower.

I didn't have cilantro.

But, for my first attempt at curry, I thought it was really good. My family

really liked it, except my husband said there was too much cauliflower. But

it has only been the past year that he has started eating it, so I was

happy.

I served it with brown rice and sourdough garlic bread.
