Blueberry Snack Cake: 2 cups white flour ( I use 1 cup white 1 cup wheat) 1/2 cup sugar 1/2 cup margarine cold 1 teaspoon baking powder 1 cup soy/rice milk 2 eggs, seperated 2 cups fresh or frozen blueberries In a mixing bowl, combine flour, sugar and cut in cold margarine until crumbly. (I use my hands to do this step) Set aside 3/4 cups of the mixture for the topping. Then add the baking powder, egg yokes,rice milk and blend. Beat the egg whites until soft peaks form then fold into batter. Pour into greased 13 x 9 pan, sprinkle with blueberries then with topping mixture.
