I made this tonight and it was wonderful. I modified it slightly. I

lightly steamed 4 cups of mixed vegetables and mixed them in with the

pasta, and beans before I served it. I also omitted the grated

cheese.

Just the two of us ate about half of it, so there will be lunches for

the next couple days. Oh Yummy!

I have also done this in the past with garbanzos and it is delish! Another thing

to put in at the very end is a handful of baby spinch so it barely

cooks--mmmmmmmmmm! Oregano has also been a nice add in. My kids have loved

varied versions of this recipe since they were small!
