Guest guest Posted July 23, 2007 Report Share Posted July 23, 2007 Red Pepper Bruschetta 3 red peppers, roasted and peeled, julienne 1/2 onion, minced 1 bunch parsley, chopped fine 2 tablespoons garlic, minced 3 tomatoes, seeded, peeled and diced small 2 tablespoons olive oil 1 tablespoon balsamic vinegar salt and pepper to taste Combine all ingredients in a medium bowl. Mix well and refrigerate for 30 minutes. Strain and serve on toasted baguette circles. Yield 3 cups tamaras_recipe_haven/ Need some new recipes? I have been making a pig of myself with the tomatoes and I thought that this may help me get away from them.
