Do I pit the needles off and grind them or use them whole in pasta sauce or on roasted veggies? Guest guest Posted July 23, 2007 Report Share Posted July 23, 2007 Pull them off the stem and just cut up the needles. I love to put them in some pan roasted Red potato chunks that I boiled first. All I do is boil the potatoes until just tender. Drain and Cut the potato's into large chunks. Then add to a hot frying pan with a little oil. Brown and then add some coarse salt and your rosemary, cooking just a little more to release the rosemary flavor, but not burn it. It is so good. Instead of pan frying it, you can put the cooked potato chunks into a bowl or zip lock bag with a little cooking oil, coarse salt, and the chopped up rosemary. Put this mixture onto a baking sheet and bake until browned nicely @ 425 degrees. Also I use the chopped up rosemary in my pizza crust along with some oregano. Just delicious. Sprinkle on top of your cheese on a pizza before you bake it is another think I like. I also add some fresh chopped up basil leaves to my pizza, but put it until the cheese, so it doesn't burn. Rosemary is great to add to french bread recipes or you can just add it to those Pillsbury dough that cames in a cylinder. Great on Roasted veggies as you suggested.
