Guest guest Posted July 23, 2007 Report Share Posted July 23, 2007 Green Beans Modena Serving Size: 12 3 ounces Balsamic Vinegar 6 ounces Olive Oil 2 ounces peeled Shallots chopped Salt/Pepper to taste 3 Tomatoes, peeled, seeded -- and diced 3 pounds Fresh Green Beans as needed Ice Water 1/3 cup Fresh Cilantro, chopped In a bowl, whisk together the vinegar, oil, and shallots. Set aside for one hour. In a large pot, bring two gallons of lightly salted water to a boil. Add the green beans and cook, uncovered, until tender-crisp. Immediately strain the beans and immerse in ice water to cool. Drain thoroughly. Place the beans in a large bowl. add the tomato and cilantro. Whisk the dressing to combine and pour over the beans.
