INGREDIENTS: 1/2 c self rising flour; sifted 1/3 cup all purpose flour; sifted 1 egg 1/3 cup milk (reduced fat or no fat if desired) 1 tsp brown sugar 1 tsp baking powder 2 tbsp diced walnuts 250 ml. canola oil (for deep frying - heat to 375F) Syrup: 4 tablespoons pure honey 1.5 teaspoons cinnamon METHODS: Beat the egg, then add the sugar and milk. Sift 1/2 cup of self rising flour and the baking powder and add to the milk, sugar, walnuts and egg mixture. Set aside for half hour. Mix while adding 1/3 cup all purpose flour until the batter become thick but elastic. Heat the oil until very hot but not smoking, then reduce to very low heat. Wet the teaspoon so that the dough will not stick on it, take a teaspoon of the dough, and, using your hand, push it down into the hot oil (take care, do not burn yourself!). Within seconds it puffs up and rises to the surface. Repeat this process, wetting the spoon each time, for about 6-7 fritters at a time. Turn them over so they become golden all around - it only takes 1 minute. Take them out with a slotted spoon and drain on kitchen paper. Serve 4-5 fritters (loukoumades) on each plate, pour honey (as much as desired) all over them and sprinkle on cinnamon (as much as desired). They should be eaten immediately and also they should not be left waiting once the syrup honey has been spread on them. You could also use molasses, maple syrup, or fruit preserves. Enjoy!
