Guest guest Posted July 22, 2007 Report Share Posted July 22, 2007 Latin Lentil Stew 1 cup brown lentils 4 large carrots sliced 1 to 2 large onions 1/2 bunch cilantro 1 tsp. cumin 1/4 tsp. red pepper flakes large can tomatoes or 8 to 10 fresh ones chopped oil Heat just enough oil to cover bottom of stock pot or use a non-stick one. Add carrots, and onions. Cook until onions are translucent, stir in cumin and red pepper flakes. Add lentils and tomatoes. Simmer until lentils are tender. Add water as needed. This should be very thick. Add cilantro about 15 minutes before its done. Lentils are hard to judge. Could take 25 mins to 45 mins. Serves: 4 ______________________________\ ____ Luggage? GPS?
