TNT Cool and fresh salad,and the colors are so pretty New beets and baby cukes make this a very tasty, attractive salad. Chilled Beet & Cucumber Salad Vegenaise 4 medium beets, boiled, thoroughly cooled, peeled and dices(blot excess beet juice on a paper towel.) 5 baby cucumbers(sliced). We call these " pickles " they are available for only a short time for canning. They are tender, crisp and delicious.) You can use reg. cukes 4 Tablespoons Vegenaise 2 Tablespoons Capers Chopped chives Arrange sliced cucumbers on outer edge of salad plates Add chopped beets in the center Top with dollop of Vegenaise Top Vegenasise with Capers and chopped chives Deanna in Colorado Quote Link to comment Share on other sites More sharing options...
