Review: hot Chinese eggplant

The sauce on this was good (I had to leave out the sherry as I didn't have

any, but I added some Mirin...). I thought the eggplant was too overcooked.

I'll try it again but make the sauce first, simmer it down and then coat the

sauteed eggplant. I'm also going to try the leftovers cold in the morning, that

might be tasty. Amy

I thought this was going to be a big hit here too but turned out to be

one of those flops that no one likes. Way too much sauce (I realized

as I'm pouring on that -ooops- that too much!). I guess for my

eggplant - give me Italian style dishes and for Chinese - I want

crispy, crunchy veges.

 

Love seeing all the recipes though and trying out new things.
