I thought the eggplant was too overcooked. I'll try it again but make the sauce first, simmer it down and then coat the sauteed eggplant. I'm also going to try the leftovers cold in the morning, that might be tasty. Way too much sauce (I realized as I'm pouring on that -ooops- that too much!). I guess for my eggplant - give me Italian style dishes and for Chinese - I want crispy, crunchy veges.
