Guest guest Posted July 21, 2007 Report Share Posted July 21, 2007 1 package yeast 1 Tablespoon sugar 1 cup warm water 3 cups all-purpose flour 2 teaspoons salt 1 teaspoon olive oil Nonfat cooking spray 1 Tablespoon cornmeal 1/2 cup shredded lowfat Mozzarella cheese Tomato sauce Dissolve yeast and sugar in water and let stand in a large bowl for 5 minutes. Stir in 2 3/4 cups flur, salt, and oil. Form a soft dough; then knead on a flured board until smooth and elastic (5 minutes) while adding remaining flour. Place dough in a bowl coated with cooking spray. Then turn to coat top. Cover and let rise in a warm place. (about 1 hour) Punch dough down and divide in half. Spray 2 pizza pans or 2 cookie sheets with cooking spray and dust with cornmeal. Roll dough into 12-inch circles or rectangles. Crimp edges of dough to form a rim. cover and let rise for 30 minutes.
