Guest guest Posted July 20, 2007 Report Share Posted July 20, 2007 8 ounces nonfat plain yogurt 1 Tablespoon fresh curry powder 8 ounces firm tofu, cut in small cubes 1 teaspoon oil 1 clove garlic, crushed 1 green pepper, cut in strips 1/2 cup vegetable broth In a small bowl, blend yogurt and curry together. Cube the tofu and add to the yogurt/curry mix. In a skillet, saute the garlic in the oil. Add the green pepper and the broth as needed to keep vegetable from drying out. Add the yogurt/tofu mixture to the skillet. Stir gently to blend. Cover and cook on low heat for about 15 minutes.
