Guest guest
Is it true that squeezing lemon on spinach helps you absorb the iron in spinach? I read this years ago. Guest guest
It's true only in the respect that Vitamin C helps the body absorb iron. People who take an iron pill should wash it down with juice, as juices contain vitamin C. Spinach, although high in iron, also has oxyalic acid which makes the iron harder to assimilate. Hope this helps. On 7/20/07, Gene Green <cilantrogreen wrote: > > Is it true that squeezing lemon on spinach helps you > absorb the iron in spinach? Guest guest
I've heard this too and I always use lemon juice with my spinach whether it's raw or cooked.
