Double-Spaghetti Squash

This doesn't take long at all. You can boil the

squash and when it's 1/2 done boil the spaghetti.

It's a good dish for the hot weather.

 

Double-Spaghetti Squash

 

1 medium spaghetti squash, 3 pounds

8 ounces uncooked spaghetti, broken in half

1/2 cup finely chopped fresh parsley or another green

4 tablespoons grated Parmesan cheese

4 tablespoons butter or margarine, melted

2 tablespoon fresh oregano or cilantro leaves

1 teaspoon garlic salt

Add some dried herbs if you like when you toss.

 

You can cut spaghetti squash in ha;f lengthwise and

seed, boil in water for 20- to 1/2 hr and remove

strands when done and sva e shells ot you

can.............Heat oven to 400 degrees. Pierce

squash with fork;

place in ungreased square baking dish, 8x8x2 inches.

Bake uncovered about 1 hour 30 minutes or until

tender.

Cook and drain spaghetti as directed on package.

Cut squash lengthwise in half; remove seeds and

fibers. Remove spaghetti-like strands with 2 forks.

Toss squash, spaghetti and remaining ingredients.

Return spaghetti mixture to squash shells to serve.

Serves 4
