I eat mochi a lot, but it's not always brown rice. There are only a

couple brands (I know of one) in the US which are made with brown rice.

The stuff I buy at the asian market is made from white rice. I use it

as a dumpling/egg noodle replacement. They're thick and chewy, like

the egg noodles I used to make from scratch.

 

The rice used is sweet glutinous rice. The flour made from it is

called mochiko (usually white glutinous rice, rather than brown, though

brown can be bought, too).

 

I use mochiko to make roux.

Does vegetarian group have a mochi folder? I'm new to mochi - any

recommendations? I tried grainaissance sesame garlic mochi and loved

it. Is there a good website to buy different flavors, or different

brands? Does anyone recommend another brand? I'm not into making it

myself - yet...

Hi Shelly. Thank you for posting - I never heard of mochi before so I

had to go look it up. It seems a bit hazardous from the Wikipedia

explanation!

Just dug my package out of the freezer....

 

Pre-heat oven to 450 degrees.

 

Cut into 1 " - 2 " squares

 

Place pieces at least 1 " apart on baking sheet.

 

Bake 8-10 minutes until pieces puff up and brown.

 

This is gluten and dairy free.

I'd forgotten about mochi, I don't think the stores close to me where

I live now have it! I used to cut it into squares, bake it and top

with berries and honey as a dessert. I've also had green tea ice

cream with mochi bits mixed in but didn't make that : )
