But there's something really wonderful about the rich, buttery, yeasty flavor of homemade crescent rolls. If you have time, this recipe's results will leave you proud and satisfied. NOTE: Organic ingredient are recommended... INGREDIENTS: 3 1/2 to 3 3/4 c. all-purpose flour (if use whole wheat flour 3:1 ratio) 1 tsp pure honey (original recipe called 1/4 c. sugar) 1/2 c. very warm milk (reduced fat if desired) 1/2 c. very warm water 1 package yeast (2 1/4 tsp) 1 tbsp butter, at room temperature (original recipe called 1/4 c. butter) 1 egg, beaten, at room temperature 1 tsp salt (if using salted butter, omit salt) METHODS: Mix 2 c. of the flour, the sugar, 1/4 c. butter, salt and yeast in large bowl. Add warm water, warm milk and egg. Beat with a fork or electric mixer on low speed 1 minute, scraping bowl frequently. Stir in enough remaining flour to make dough easy to handle. Place dough on lightly floured surface. Knead about 5 minutes or until dough is smooth and springy. Place dough in large bowl greased with butter, turning dough to grease all sides. Cover bowl loosely with plastic warp and let rise in warm place about 1 hour or until double. Dough is ready if indentation remains when touched. Grease cookie sheet with shortening (or butter). Gently push fist into dough to deflate. Cut dough in half. Roll each half into 12 " circle on floured surface. Spread with softened butter. Cut each circle into 16 wedges. Roll up each wedge, beginning at rounded edge. Place rolls, with points underneath, on cookie sheet and curve slight. Brush with butter. Cover loosely with plastic warp and let rise in warm place about 30 minutes or until double. Heat oven to 375F. Bake 12-15 minutes or until golden brown. Serve warm or cool.
