Cucumber Relish - Indonesian

2 qt cucumbers coarsely ground

2 tbl salt

1 qt onions coarsely ground

1 tsp salt

1 tsp alum

4 cup sugar

1 tsp turmeric

1 tsp celery seed

1/2 tsp cloves

1 tbl mustard seed

3 cup vinegar

 

 

 

 

Peel and cut out centers of large cukes and put

through a coarse food chopper. Add 2 Tbsp. salt, mix

well. Grind onions and add 1 tsp. salt and alum, mix

well. Let set in different pans for 2 hours, rinse a

little and drain well for several hours. Mix remaining

dry ingredients good so there will be no lumps. Put in

a large cooking pot, add vinegar and let come to a

boil. Add cukes and onions and bring to a full boil,

stirring often. Seal in sterile jars.
