Offer the non-vegetarians some of what you make for yourself. They will eat more and more of what you are preparing. Don't expect miracles overnight though. Check out your library for some books or visit the book store. Has helped me alot because I was not sure if I needed to strive for a certain balance or what to do. As for my DH and children (8 and 12) - they are LOVING most of my recipes and many of the meat substitutes. They mostly eat what I eat at home but not vegan with them and I do allow them some exceptions a few times each week. Tonight my DH is out of town so I fed the kids a frozen stir fry with shrimp that they always enjoyed but I had a different meal from veggie leftovers. Cheese pizza, ravioli (found some great butternut squash frozen ones!), bean enchilidas, pastas and sauces with fresh veggies - raw or cooked. Just browse these recipes - some really great sounding dishes are listed. Peanut butter sandwiches..... all things the kids liked before. Newest fav - spicy bean burgers - LOVE them! Again, I do allow the kids some exceptions for now but am amazed that they are handling this so well. In part because there are so many great recipes and products on the shelves these days. You could probably find it in the cookbook section of your local bookstore. When my friend's husband decided to become a vegetarian, I recommended it to her - it's covers the basics of what kind of things you need to eat. He's used it a lot! Lots of people buy the best in books and then don't follow through and never use them. That was where I got almost all of mine. I have never paid more than $3 for any one of these beautiful once expensive books. Some I have traded and others given away. Several I use almost daily. In the begining I checked out library books but soon discovered the thrift stores. I also found a beautifully illustrated book of crochet afghans for my mother. She has made several of the patterns. I also buy most if not all of my kitchen things. My 3 pieces of Pampered Chef are some of my favorites. $4 ea. I collect antique kitchen tools and porcelain pans. Found all of these treasures at thrift stores or yard sales. Way too much fun.
