INGREDIENTS: 4 apples; finely cubed 4 pears, firm; finely cubed 2 tablespoons lemon juice (room temperature) 1/3 cup raw extra fine cane sugar 3 tablespoon whole wheat flour 1 teaspoon cinnamon 1 homemade whole wheat pie dough for 12 mini pies Dough: 1 cup spring water; ice cold 1 teaspoon dark sweet vinegar 1/3 cup extra virgin olive oil 1 1/2 cups whole wheat flour 1 cup rising flour METHODS: Preheat oven to 350 degrees. Filling, combine all ingredients, set aside. Dough, combine all ingredients by orders listed above, when adding flour, only 1/3 to 1/2 cup at a time, mixed well and make a soft dough. Plastic wrap in a olive oiled bowl, store in fridge for 1 hour before it is used. Divided dough into 2, then divided each dough into 12, make 24 small doughs. Place one small dough in small pie mold, spoon 2 tablespoon pear & apple mixture each. Top with a small dough covered. Trim the edges carefully. Brush olive oil & egg wash (if desired, 1/2 egg plus 1 tablespoon water) before putting in the oven.
