Guest guest Posted July 12, 2007 Report Share Posted July 12, 2007 Strawberry Nut Cupcake 2 cups oat flour 2 1/2 tsp. baking powder 1/4 tsp. salt 1/2 cup chopped walnuts 1/2 cup ghee 3/4 cup honey 1 tsp. vanilla 6 oz. strawberries in 1/2 " pieces 1/2 cup milk Preheat oven to 375F. Oil cupcake tins or line with paper liners. Mix dry and wet ingredients in separate bowls. Then combine wet and dry and mix together. Spoon batter into tins until about 2/3 full.Bake until knife inserted into center of cupcake comes out clean in roughly 15 min. Let cool and take out of tins. Frost with strawberry frosting. Strawberry frosting 1/3 cup ghee 1 cup organic confectioner's sugar 1 tsp. vanilla 1 Tbsp. strawberry juice Beat mixture until very light. Frost cakes. Enjoy the sugar rush.
