INGREDIENTS: 1/2 lb. long macaroni (whole wheat or wheat if desired) 1/4 c. butter 1 1/2 c. grated cheese A portion of bechamel sauce METHODS: Boil the macaroni in 4 quarts of boiling water (salted if desired). Drain well and return to the pan. Prepare the bechamel sauce as the instructions describe. INGREDIENTS: 4 tbsp butter (reduced fat and unsalted if desired) 6 tbsp flour 1/4 tsp salt (optional) 1/4 tsp fresh pepper dash of Nutmeg 2 c. milk (reduced fat or no fat if desired), heated but not boiled (optional) 2 egg yolks METHODS: Melt butter over a low heat; add flour, salt, pepper and nutmeg; stir until well blended. Remove from heat. Gradually stir in milk and return to heat. Cook, stirring constantly, until thick and smooth. Makes 2 cups. With Eggs: When sauce is thick, remove from heat and gradually add 2 egg yolks, slightly beaten, stirring constantly. In a greased casserole put the macaroni in layers with one cup of the cheese. Pour over sauce. Sprinkle with remaining cheese and bake in a hot oven 350F for 30 minutes. Get the toolbar and be alerted to new email wherever you're surfing.
