Stir-Fried Boy Choy (chinese cabbage) 2 oz soba or udon noodles (look for kamut or spelt in the whole foods section, alternatively, you can use whole wheat spaghettini) 2 Tbsp soy sauce 2 Tbsp teriyaki sauce 4 Tbsp rice wine vinegar or dry sherry 2 tsp minced ginger 1 Tbsp olive oil (that's good cholesterol 4 cups chopped bok choy or nappa cabbage 8 oz shitake mushrooms, thickly sliced (I use a 10oz can of shitake, drained and rinsed, that I found in the asian section) 4 green onions, sliced 8 oz medium firm tofu Cook the noodles according to package directions. In a jar, add the soy sauce, teriyaki sauce, rice wine vinegar, and ginger. Cover the jar and shake to combine. Heat the olive oil in a large wok or frying pan. Once hot, add the tofu and lightly brown. Add bok choy and mushroom and stir-fry until cabbage is wilted. Pour the sauce over the cabbage mixture and allow to reduce. Divide the noodles on to two plates and serve half the stir-fry mixture over the noodle. I checked the files both under " pasta " & " cabbage " but didn't see a recipe there. Does anyone have a healthy Cabbage and Noodle recipe on hand.? Hubby has high cholesterol and I really have to watch the fats....I know pasta is high but I give him pasta only once a week and cut waaaaaaaaaaaaaaaay down on the amount used. Guest guest Posted July 11, 2007 Report Share Posted July 11, 2007 I make a recipe very simular to this. It uses Ramon noodles and doesn't have the tofu. I just toss the salt laden flavor packet. Using Ramon noodles you can just put everything into a freezer strength baggie, squeeze all the air out, seal, and microwave 3 minutes.
