INGREDIENTS: 1 lb. dandelion greens 4 cups spring water 3 tablespoons extra virgin olive oil 2 lemon juice (lemons in room temperature) METHODS: Discard dandelion green roots; wash greens well in water. Cut leaves into 2-inch pieces. Boil 4 cups water, cook greens uncovered in boiling water until tender, about 15-20 minutes. Drain greens well; set aside.
