Guest guest Posted July 11, 2007 Report Share Posted July 11, 2007 Olive Oil-Tofu Dipping Sauce 2 garlic cloves 1/2 teaspoon kosher salt 1/3 cup extra-virgin olive oil 1/3 cup low-fat firm silken tofu 2 tablespoons chopped fresh flat-leaf parsley Mash garlic with kosher salt into paste in mortar and pestle or with side of knife. Transfer to blender. Add extra-virgin olive oil and low-fat firm silken tofu; blend until smooth and creamy. Transfer to serving bowl. Stir in chopped fresh flat-leaf parsley. Makes about 1/2 cup.
