INGREDIENTS: 8 c. water 1 2 " piece fresh ginger, thinly sliced 8 lemon peel strips (2 1/2 " x 1 " each) gunpowder green tea leafs 1/4 c. pure honey lemon wedges (optional) METHODS: In a large saucepan stir together the water, ginger, and lemon peel strips. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Remove ginger and lemon strips with a slotted spoon and discard. Place tea leafs in a teapot; immediately add simmering water mixture. Cover and let steep according to tea directions (3 to 5 minutes). Remove tea leafs, squeezing gently, and discard. Stir in honey. Line a strainer with a thin wet cloth and strain tea into a pitcher. Chill thoroughly and serve on ice with wedges of lemon and lime. Makes 5 to 6 servings. *Note: Remove lemon peel using a vegetable peeler. If necessary, use a sharp knife to scrape off any white pith that remains on the peel, as this can cause bitterness.
