Title: Grilled Bread With Caramelized Onions And Blue Cheese

Yield: 4 Servings

 

Bread Dough

1 pk Active Dry Yeast

3/4 c Warm Water

1 t Sugar

2 c Flour

1/4 c Olive Oil

1/2 t Salt

 

 

Onions

5 T Olive Oil

3 Red Onions,Peeled And

-Sliced Into Thick Rings

Kosher Salt And Freshly

-Cracked Black

Pepper

1 t Sugar

Tabasco

1/2 c Maytag Blue Cheese,Crumbled

Foil Pan

1/4 c Italian Parsley,Chopped

Mix the yeast with the warm water and sugar. Let sit for a few minutes,

until foamy. Combine the flour, olive oil and salt in a bowl. Stir in

the yeast mixture. Knead on a lightly floured board until smooth and

elastic, about 10 minutes. Place in an oiled bowl, turn, cover, and let

rise in a warm place until doubled in size. Meanwhile, prepare onions.

 

In a large skillet, heat 2 Tablespoons of the oil until it is hot but

not smoking. Add the onions and sugar and reduce the heat to low.

Season with the tabasco, salt and pepper. Saute, stirring occasionally,

until well caramelized, about 20-30 minutes.

 

Preheat the grill to medium.

 

Divide dough in half and form into 2 balls. On a lightly floured board,

roll each ball into a round. Make sure the dough is about 1/8 inch

thick. Brush both sides with olive oil and sprinkle with a little

cornmeal.

 

Place the bread on the grill and cook until toasted and brown on one

side. Flip over. Top each round with a pile of the onions. Scatter the

blue cheese over the onions. Invert a foil pan over the bread, continue

to cook until the cheese starts to melt, about 3 minutes.

 

To serve, cut the bread into pieces and sprinkle with fresh parsley.

Serves 4-6 as appetizers.
