Red Bean Paste Doraemon Cakes

Note: Organic ingredients are recommended...

INGREDIENTS:

2 brown eggs large (room temp.)

10 tablespoons milk (reduced fat or no fat if desired)

2 cups all purpose flour

1 tablespoon pure honey

3 tablespoon raw extra fine cane sugar

2 teaspoons baking powder

10 teaspoons red bean paste (homemade if desired)

METHODS:

Beat egg till solid yellow color, Add sugar 1 tablespoon at a time.

Add milk & honey, sift in flour and baking poweder into egg mixture, keep on

stirring until mixture is smooth, if mixture is too thick, add more milk if

needed, plastic warp it and set aside for at least 30 minutes.

Slightly oiled a flat pan with low heat,

1 tablespoon mixture to make one cake.

repeat the above and make 20 cakes.

Cool cakes completely.

Fill in 1 teaspoon red bean filling on one cake,

Top with another cake, slightly press together carefully.

Homemade Red Bean Paste:

1/2 cup red beans

3 tablespoons pure honey

2 cups spring water

METHODS:

Soak red bean for 1 hour, put red bean in a small saucepan.

cover red bean with 1/2 cup of water, keep low fire boiling.

every 15 minutes add 1/2 cup water to cover the beans.

repeat every 15 minutes, add 1 tablespoon honey,

add more water if you see water is no longer cover the beans

and keep on stirring the beans...

boil 1 hour, pour the soften red bean into food processor for 30 seconds.

It becomes red bean paste.
