INGREDIENTS: 6-8 oz. white button mushrooms, finely chopped 1 bunch spring onions; finely chopped 1 clove garlic; grind 1 tablespoon fresh parsley; finely chopped 2 tablespoons all purpose flour (whole wheat breadcrumb is OK, too) 3 tablespoons cheddar cheese or mozzarella cheese (reduced fat or no fat if desired) 3 tablespoons extra virgin olive oil dash dill dash ground black pepper if desired METHODS: Mix in a bowl the mushroom, green onion, garlic, parsley, dill & pepper. Add 1 tablespoon olive oil on a flat pan, pour in all ingredients Stir with a wooden spoon, cook about 3-5 minutes until mushroom is tender. Add cheese and flour to form cakes and fry both sides with olive oil (2 tablespoons or more) until golden brown. Do not burn the olive oil because this way the mushroom cakes might burn on the outside easily. When ready remove from frying pan lace them in a platter on top of and absorbing paper and serve.
