INGREDIENTS: 4-5 leeks (abt 1lb.) 1 large brown egg (room temp.) 1/3 cup ricotta cheese (reduced fat or no fat if desired) 1/3 cup mozzarella cheese (reduced fat or no fat if desired) 1/3 cup cheddar cheese (reduced fat or no fat if desired) 1 bunch green onion 1/2 bunch parsley; finely chopped 2-3 cloves garlic; grind dash dill dash spearmint (optional) dash ground black pepper 2 tablespoons extra virgin olive oil For the dough: 1 cup water Vinegar few drops 1/2 teaspoon salt 1 cup all purpose soft flour 1 cup self raising flour 1/2 cup extra virign olive oil METHODS for the Dough: In a bowl add the water, drops of vinegar and the olive oil. Add 1 teaspoon salt and the flour (1/3 cup at a time). Work the mixture well as much as it needs to become tight. If it requires more water and flour add in order for the dough to become as thick as it needs. Cover the dough with plastic wrap and leave it for half an hour before it is used. METHODS for the Pie: Remove greens and ends from the leeks. Chop them in small pieces and wash them using plenty of water to remove soil. Chop them using a blender or a knife. Add 2 tablespoon olive oil on a flat pan in medium heat, pour in the leek, green onion, pepper, dill, garlic, parsley and spearmint (gives a very nice taste!). Cook the mixture well with a wooden spoon in order to unify all ingredients, about 10 minutes until veggie is tender. Beat egg and add in the mixture, then add cheese. Slightly oil a baking pan well. Spread the dough and make two sheets of phyllo (one for the base and one for the top). Place the first in the baking pan and oil it. Spread the mixture on top of the first sheet and then place the second sheet. Slightly oil it and slice off any parts of the sheets that have remained. Score the top sheet with a knife into squares or use a cookie animal cutter to create your own style pie. Brush egg wash (1/2 egg + 1 tablespoon water) before putting it in the oven.
