Guest guest Posted July 9, 2007 Report Share Posted July 9, 2007 @@@@@ Caribbean Salsa 2 Cups mango, peeled and cut into 1/4-inch cubes 1/2 Cup cucumber, peeled, seeded and cut into 1/4-inch cubes 1/4 Cup fresh cilantro, chopped 2 Tablespoons green onions, finely chopped 1/2 Jalapeno pepper, seeded and finely chopped 3 Tablespoons fresh lime juice 1-1/2 Teaspoons brown sugar 1 Teaspoon fresh ginger, peeled and minced Dash pepper In medium bowl, combine mango, cucumber, cilantro, lime juice, green onions, jalapenos, brown sugar, ginger, and pepper. Mix throughly and chill for one hour before serving.
