The article stated that imported prepared Thai Paste is preserved in tropical oils. Also many Thai pastes have more than one artificial chemical presertive added. This recipe has no tropical oils or chemical preservaties. There are two ingredients that I am not familiar with and not sure I can find but will look into it. They are Laos root and Makrood Rind. Following is the recipe for Red Thai Curry Paste. To make Green paste substitute fresh Serrano peppers for the red chili. Question??? Why is this called " curry " paste when no curry is added? As you can tell I know nothing about Thai food. LOL Thai Curry Paste 1 teaspoon Caraway seed 1 teaspoon Coriander seed 1 teaspoon chopped dried Makrood rind 1 teaspoon ground dried Laos root 2 Tablespoons chopped fresh Lemon Grass 2 Tablespoons chopped red onion 2 Tablespoons red chili powder(The purest may want to use dried red Thai peppers) 10 cloves of garlic peeled 1/2 teaspoon salt 1/2 teaspoon water Process ingredients in blender until coarsly ground Add water , mix well to make a smooth paste Ok now..Which brave person wants to join me in an experiment making these Thai pastes? Most Indian curries are combos of cumin, chili, fenugreek, ginger, tumeric and corriander, among other spices, in varying amounts and intensities. Thai curries seem to always contain lemon grass among other spices. Maybe that's what gives Thai food that wonderful tanginess? I am working on duplicating the Thai flavors that I tasted recently at a Thai restaurant in Cali. I want to try using crystalized Ginger in a soup broth and see how that works.
