I forgot about this, I made one for the BBQ in 2 hrs.

A Haitian coworker gave me this recipe years ago.

 

 

Haitian Onion Pie ( Haitian tarte a l'oignon)

 

6 onions chopped

1/2 tsp. salt

1/2 tsp. sugar

1/2 tsp. black pepper

4 tablesppons butter or margarine

4 tablespoons flour

1/3 cup milk

grated parmesan cheese

 

pie crust (unbaked)

 

Preheat oven to 350 degrees and place a pie crust in 8

or 9 inch pie plate (pierce bottom of crust with fork

2 times). (I use my glass quiche plate)

Melt butter and saute onions until tender but still

slightly firm.

Slowly add salt, pepper, sugar and flour, stir to mix

well. Add the milk slowly and mix. Stir in parmesan

(I use 1/4 cup). Place mixture into pie crust lined

plate and bake 30 to 40 minutes. Cool 15 minutes,

slice and serve.
