Jerry's lazy, safe hummus

I love hummus. I always have it around as a 24-hour-a-day snack and as an

all-purpose

dressing for everything. I usually make it with chickpeas. But there are some

days when

making it is a drag. Dragging the food processor down from the shelf seems a

chore --

and then there's the awful prospect of having to clean the food processor

afterwards. And

besides, it's dangerous: opening a can of chickpeas exposes me to the risk of

cutting

myself on the very sharp lid, which I have done. And I've also given myself a

nasty cut

washing the food processor blade. So recently, when I'm not in a risk-taking

mood or

don't feel like taking on an onerous chore, I've been making this instead -- my

lazy, safe

hummus.

 

Jerry's Lazy, Safe Hummus

 

All measurements are approximate.

 

* 2 cups yoghurt -- I use Stonyfield non-fat

* 2 generous TBSP of tahini

* 2 garlic cloves, mashed

* juice of half a lemon

* 1/4 tsp cumin

* 1/4 tsp coriander

* 1/4 tsp sweet smoked paprika

* a pinch of red pepper

* salt and black pepper to taste

Stir it all together -- DON'T STIR TOO VIGOROUSLY! You need to conserve your

strength.

Since this doesn't contain chickpeas or beans, I don't know if this technically

qualifies as a

hummus. But I'm too lazy to find another name for it.

LOL I thought for sure this recipe was going to be:

get in car

go to Whole Foods, co-op, or grocery store

buy large container of hummus.

return home. Enjoy!

Jerry,

Still smiling at your 'Safe Hummus' recipe. At my age(66) I too have

to be careful of 'risk taking'. LOL ..It's been so darn hot that I am

mostly hibernating inside except for an early morning or late evening

walk. I often make hummus using a fork and just smushing the beans.

Sure a lot easier than getting out the blender and washing it.

However that does leave the danger of opening the can. 'hummus' with

Veganaise is my favorite sandwich spread. Sometimes I just open a can

of Organic Vegetarian refried beans . Especially in the summer..Way

too hot to cook.
