Unfortunately, Rachel, trial and error are the only ways to learn,

when it comes to culinary skills. Be patient, and everything will

fall into place. I cooked professionally for forty years, and during

that time, I would have days when old standards weren't up to par.

Maybe you tried too hard, because it was for Gavin's big day.
