Guest guest Posted July 8, 2007 Report Share Posted July 8, 2007 The way we like them is when the peel is very dark and the plaintain is somewhat soft, peel, slice the plaintain on the diagonal, not too thick or too thin.....lay in a pan with a little butter...squeeze lemon juice over all, then a sprinkle of cinnamon. Let them 'simmer' for a few minutes, then turn them over, sprinkle with a little more lemon juice and cinnamon. They will turn dark and somewhat crusty. You may have to add a little more butter, so they don't stick. These taste so good this way and they taste very much like the way the Cuban restaurants serve them.
