Guest guest Posted July 8, 2007 Report Share Posted July 8, 2007 Am I the only parent eating ratatouille in the last week since the movie came out? :-) My 12-year-old saw the movie Friday night, loved it and _had_ to make ratatouille. She came home and researched several recipes. With my help, we made it for dinner tonight. Some of you old timers will remember a year ago when we discussed mandolin slicers. I bought the brand (Borner) that several of you liked and felt was reasonably safe, but I hadn't used it until today. Boy, was it fun! My daughter really wanted the layered ratatouille like they had in the movie and not a " stew-like " ratatouille. So I made beautifully thin slices of zucchini, yellow squash, eggplant, orange bell pepper, red onion, tomato. She layered it in a casserole with herbs (rosemary, thyme, parsley), salt, olive oil, tomato sauce, and some parmesan cheese between the layers. She cut some parchment paper to fit the casserole and then we popped it in a 350 degree oven for 45 minutes. It came out pretty well and she was delighted. I now have loads of leftover paper-thin sliced veggies, so I guess it's going to be veggie soup tomorrow. We served it on brown rice. For dessert I made the berry-peach cobbler featured in this month's issue of Cooking Light, cause this was my birthday dinner. That was a very yummy recipe.
